Broccoli Cheddar Soup

Ingredients
| Swiss Bear Cheddar Cheese Sauce Mix | 200g |
| Water | 400g |
| Onion, finely diced | 50g |
| Garlic, chopped | 10g |
| Broccoli | 150g |
| Low Sodium Chicken Stock / Vegetable Stock | 500g |
| Whole grain mustard | 1/2 tsp |
| Black pepper, crushed | To Taste |
STEP 1
In a pot, bring water to boil. Turn off heat and gradually add in Swiss Bear Cheddar Cheese Sauce Mix while stirring constantly until it is smooth. Set aside.
STEP 2
Cut broccoli into small bite size pieces and separate the florets and stem. Dice stem into small pieces.
STEP 3
In another pot, sauté onion and broccoli stem over medium heat until onion turns translucent.
STEP 4
Add garlic and sauté for another 30 seconds.
STEP 5
Add chicken stock / vegetable stock and bring to a simmer.
STEP 6
Add the broccoli and simmer for 15 minutes until the broccoli is tender.
STEP 7
Lastly, add Cheddar Cheese sauce, black pepper and mix well. Allow soup to simmer for another 5 minutes and is ready to serve.
